March 24th a hands-off dinner tasting event with Chef Xavier Lacaze!Although it may still be a bit snowy here in Canada, Spring is well underway in Southern France by the end of March. Canada's Top Chef competitor Xavier Lacaze puts together a fresh, and simple menu inspired by his childhood in Gascony, France. Au menu:
Escargot ragout with fava beans and chorizo
Heirloom tomato gazpacho
Pan-sear snapper with fennel purée
Stuffed boneless quail with wild mushroom and pea fricassée
Rhubarb croustade with yogurt thyme ice cream and cognac. This is a 4 course interactive dinner with wine pairing.
